I used to work at a teeny tiny cafe and my boss, the chef, made a watermelon pie one summer. It was really similar to this recipe except he used watermelon flavor gelatin, and spooned the filling over balls of watermelon. It was delicious.

Wondering what to do with that big ol' watermelon shell? Try this:
http://blog.evite.com/evite/2007/09/end-of-summer-b.html

It's fun, really cute, a great conversation piece, and if you have an all ages affair, keep the booze on the side so the kids (and drivers) can enjoy the watermelon-aid too!

Glad to see that got worked out before I got back! LOL! It is a fairly standard recipe for a chiffon pie, but the choice of watermelon struck me as both surprising and delightful.

I've not tried it, but it should work as well as any gelatin-thickened chiffon pie, all of which involve similar amounts of liquid. It's not as if you're loading piles of watermelon chunks directly into a crust

Have you actually tried this? I am leery about fresh/clean/watery watermelon meshing beautifully with a crust of any sort.
