Francesca says: mattresses should be turned, ideally, at least once a month. Francesca admits to doing it only every six months, but it still extends the life and springiness of the mattress!
Here is a tip: Take a permanent marker and write numbers 1, 2, 3 and 4 at the various heads of the mattress. It makes it easy, when you turn it, to remember which side should now be under your head.

I never knew how often to turn my mattress. If I’m supposed to do that once a month, should I change my sheets once a month, too?

I’ve got one of them there memory foam mattresses (best. thing. ever.) so those don’t need turning –at least not that I’ve experienced– but as for sheets, I think that depends a lot on your bed occupants and whether you are a night showerer, or a morning showerer. I bathe at night, an old habit from when it would take 8+ hours for my hair to dry, so I’m daisy fresh when I get between the sheets.
I really only change my sheets once every three weeks in the winter and every other week in summer. We had them changed once a week in winter and twice in the summer when I was growing up.
