		<description>Pita is easy.  I love flatbreads in general.  I recommend:  Flatbreads and Flavors by Jeffrey Alford and Naomi Duguid.  (Actually, I recommend everything they write.)

Anyway, the only danger of making your own pita bread is that you will never want to use store-bought again.</description>
